4:30am, every morning
Zola Kitchen started in a tiny rented kitchen with one oven and more ambition than counter space. No signage, no bookings — just fresh pastries and word of mouth. That was 2019.
The idea was simple: make things properly. The croissants had to have exactly the right number of layers. The brownies had to be fudgy, never cakey. The coffee had to come from people who cared as much as we did.
Today the kitchen is bigger and the team has grown. But the obsession hasn’t changed — source the finest ingredients, respect the craft, let the oven do the talking.
